ANNUAL FINE WINE RELEASE
The exceptional 2015 vintage in Tasmania has emerged as one of the region's finest. Highly sought wines from the ideal season are characterised by powerful fruit and ethereal structure with excellent acidity and long term cellaring potential. At heart lies Tasmania’s pristine cold climate terroir. Crafted by hand in micro batches, just 2-3 barrels of each Domaine Simha wine were made from this landmark vintage.
An avant-garde approach embraces natural methods; harvesting by lunar cycle on fruit and flower days, whole bunch wild fermentation with traditional pigeage, maturation in custom demi-muid oak and clay amphorae, basket pressing, bottling unfined and unfiltered with perfect natural balance.
